Begin by mixing Honeycrisp apples with brown sugar, cinnamon, and lemon juice, then layer them between two pie crusts simmered in a blend of brown sugar and cinnamon. Skillet Apple Pie with Caramel Sauce
4 large Honeycrisp apples, peeled, cored, and sliced
1/4 cup sugar
1 1/2 tablespoons cinnamon, divided
1 tablespoon lemon juice
6 tablespoons butter
1/4 cup, plus 2 teaspoons, brown sugar
2 refrigerated pie crusts
2 teaspoons whipping cream

Preheat the oven to 350°F.
In a large bowl, mix together the apples with sugar, 1 tablespoon of cinnamon, and lemon juice until they are well coated. Set aside for later use.
In a 10-inch nonstick skillet suitable for the oven, melt the butter. Stir in 1/4 cup of brown sugar and the remaining cinnamon, blending until homogeneous. Let it boil for 5-8 minutes.
