Tortellini Meatball Soup

Recipe provided by “Cookin’ Savvy”

Yields: 6-8 servings

4 cups of beef broth

1 can (14 ounces) diced tomatoes

16 ounces frozen meatballs

19 ounces of tortellini

6 ounces frozen spinach

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon Italian seasoning

3/4 cup Parmesan cheese, plus extra for garnishing

Salt, to taste

Pepper, to taste

1/4 cup heavy cream

Bread, for serving

In a Dutch oven, combine beef broth and diced tomatoes. Rinse the empty diced tomatoes can with water and add that to the pot as well. Stir in the meatballs, tortellini, and spinach. Cook over medium heat and mix in the onion powder, garlic powder, Italian seasoning, and 3/4 cup of Parmesan cheese. Season with salt and pepper based on your preference.

Simmer for 25 minutes, making sure to stir occasionally. Then, add the heavy cream and let it cook for an additional 5 minutes.

Enjoy with some bread and additional Parmesan cheese on top.
