Before discarding your seeds after this year’s pumpkin carving, consider this delightful and nutritious snack that can easily be prepared at home, making it a perfect activity to share with the kids.
Moreover, this adaptable Roasted Pumpkin Seeds recipe can be customized with a variety of your preferred spices and seasonings.
Roasted Pumpkin Seeds
Ingredients:
1 1/2 cups raw pumpkin seeds
2 teaspoons sea salt, plus extra for seasoning (optional)
2 teaspoons melted salted butter
1 teaspoon garlic powder
1 teaspoon paprika
Start by boiling water in a pot over high heat. Once boiling, add the pumpkin seeds along with 2 teaspoons of salt and let them cook for 15 minutes. After boiling, drain the seeds and lay them out on paper towels to absorb any excess moisture.
Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with either foil or parchment paper.
In a medium-sized bowl, mix the seeds with the melted butter until they are well-coated. Add garlic powder, paprika, and more salt if you prefer, ensuring they are evenly distributed. Spread the seasoned seeds out on the baking sheet.
Bake for 25 to 30 minutes, or until they turn golden brown and are lightly toasted. Be sure to stir the seeds every 10 minutes for even cooking.
