Yields: 6 servings
1 pound of ground beef
1 onion, diced
1 can (15 ounces) of tomato sauce
1 can (15 ounces) of kidney beans
1 can (14 1/2 ounces) of stewed tomatoes
1 can (10 ounces) of diced tomatoes with green chilies
1 sweet potato, diced
Water (if needed)
1 teaspoon of chili powder
1 pinch of garlic powder
Salt, to taste
Pepper, to taste
Sour cream (optional)
Sliced avocado (optional)
In a large saucepan over medium heat, brown the ground beef and sauté the onion until the meat is cooked through and the onion is soft, approximately 5-7 minutes.
Add the tomato sauce, kidney beans, stewed tomatoes with their liquid, diced tomatoes with green chilies, and cubed sweet potato. If necessary, incorporate water to achieve your preferred consistency.
Season the mixture with chili powder and garlic powder. Adjust with salt and pepper according to your taste.
Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes while covered.
Optionally, serve topped with sour cream and sliced avocado.
