Watermelon Salad with Feta and Mint
Recipe from the National Watermelon Promotion Board
1/4 cup lemon vinaigrette
4 cups cubed watermelon
1/2 English cucumber, sliced into 1/4-inch half moons
1/2 small red onion, thinly sliced
1/4 cup crumbled feta cheese
2 tablespoons fresh mint, coarsely chopped
Begin by drizzling the vinaigrette at the base of a large canning jar. Layer in the watermelon, cucumber, red onion, feta, and mint in that order.
Seal the jar with the lid and shake well to combine all ingredients. Store in the refrigerator until it’s time to serve.
Substitution: For a different flavor, you can replace the lemon vinaigrette with Greek dressing.

Watermelon Ice Pops

1 whole watermelon
Fresh fruit chunks (like grapes, strawberries, or kiwi)
Puree the watermelon, then pour the mixture into ice pop molds.
Add in the chunks of fresh fruit, secure the tops, and freeze until solid.
Enjoy your homemade ice pops when fully frozen.
