Lemon Orzo Chicken Soup

Servings: 4-6

Ingredients:

  • 2 carrots
  • 2 celery stalks
  • 3 tablespoons butter
  • 2 cups cooked, shredded chicken
  • 1/3 cup freshly squeezed lemon juice
  • 2 teaspoons lemon pepper seasoning
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon sugar
  • 1 cup heavy cream
  • Salt, to taste
  • Pepper, to taste

Accompaniment: Cucumber sandwiches

Instructions:

  1. Dice the carrots and celery. In a large pot, melt the butter and sauté the vegetables until softened.
  2. In a separate bowl, combine the chopped chicken with lemon juice and lemon pepper, then set this mixture aside.
  3. Once the carrots and celery are tender, pour in the broth along with the orzo. Add the garlic powder, onion powder, thyme, and sugar, and allow the soup to simmer for 10 minutes.
  4. Stir in the chicken and heavy cream, and let it simmer for an additional 5 minutes.
  5. Season with salt and pepper according to your preference. Serve the soup alongside cucumber sandwiches.
