White Chocolate and Pumpkin Pie Spice Popcorn Bites

12 cups of unsalted, unbuttered popcorn, popped
3 cups of chopped white chocolate or white chocolate chips
1 tablespoon of light olive oil
2 teaspoons of pumpkin pie spice
1/2 cup of toffee bits
1 teaspoon of crushed flaked sea salt
Begin by lining a large baking sheet with parchment paper or wax paper. Then, place the popped popcorn in a big mixing bowl.
In a microwave-safe bowl, mix together the white chocolate, olive oil, and pumpkin pie spice. Microwave on medium heat for 2-3 minutes, stirring after each minute, until the mixture is completely melted and smooth.
Once melted, drizzle the white chocolate mixture over the popcorn; add in the toffee bits and give everything a good toss to make sure it’s well combined. Spread the mixture onto the prepared baking sheet, pushing it to the edges of the pan, and then top with the sea salt.
Allow the mixture to cool; place it in the refrigerator for 1-2 hours, or until it hardens. After that, break it into pieces for serving.
Tip: You can create your own pumpkin pie spice by mixing 3 parts ground cinnamon with 1 part each of ground nutmeg, allspice, and ginger.
