Fruit Tart for Brunch

Crust:

4 cups granola blend

1/2 cup softened butter

4 1/2 tablespoons honey

Nonstick cooking spray

Filling:

2 1/4 cups vanilla Greek yogurt

8 ounces cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 package gelatin

Toppings:

Sliced strawberries

Blueberries

Sliced kiwis

To prepare the crust: Preheat the oven to 350°F.

In a large bowl, mix together the granola, butter, and honey. Lightly grease an 11-inch tart pan with nonstick cooking spray, then line the base with parchment paper.

Evenly press the granola mixture into the bottom and sides of the tart pan. Set the tart pan on a baking sheet and bake for 10 minutes. Allow to cool completely.

To create the filling: Using a mixer, blend the yogurt, cream cheese, sugar, vanilla extract, and gelatin until the mixture is thoroughly whipped.

Pour the yogurt mixture into the cooled tart crust. Chill in the refrigerator for at least one hour.

Finish off by topping with sliced strawberries, blueberries, and kiwis.
